π½οΈ What is it?
A pre-Hispanic fermented drink made from nixtamalized corn dough, piloncillo (raw cane sugar), and water. Fermented for one or two days, then served ice-cold with salt, plenty of lime juice, and a scoop of lime sorbet on top.
β¨ Why it's amazing
A unique flavor β slightly tangy from the ferment, sweet from the piloncillo, salty, sour from the lime, and ice-cold from the sorbet. Good tejuino leaves a pleasant fermented aftertaste.
