A large corn tortilla with melted Oaxaca cheese and shrimp cooked al ajillo (garlic), al chipotle, or a la diabla. Folded into a half-moon and crisped on the comal until the cheese oozes out the sides.

The perfect combination: crispy tortilla, stretchy cheese, firm and flavorful shrimp. The garlic oil or chipotle heat soaks through everything. In Vallarta, eaten with a squeeze of lime and salsa macha.
