π½οΈ What is it?
Finely chopped white fish or shrimp, "cooked" in lime juice with onion, tomato, cilantro, cucumber, avocado, and serrano chili to taste. Unlike Peruvian ceviche, the Vallarta version is served on a crunchy tostada.
β¨ Why it's amazing
Lime denatures the fish proteins until firm but fresh. The acid-spice-sweet balance makes it light and refreshing β perfect for the heat. Every spot has its own version.
