Birria

Jalisco is the home of birria. Meat slow-cooked in dried chilies for hours until it falls apart — a hangover cure and a powerful breakfast.

Beef or goat braised for hours in a broth with guajillo, ancho, and pasilla chilies. Served three ways: crispy tacos (quesabirrias with cheese), soft tacos with consommé for dipping, or as a full bowl of stew.
