Aguachile

Ceviche taken to the extreme: more intense, spicier, fresher. The most ordered dish at any seafood meal among Mexicans.

🍽️ What is it?

Raw shrimp (butterflied open) cured on the spot in lime juice with a green sauce of serrano chili, cilantro and cucumber. Served ice-cold with red onion rings and tostadas. The "black" version uses chiltepín or morita chili.

Why it's amazing

The shrimp stays nearly raw (only slightly cured), letting its natural sweetness shine while the chili wakes you up. Cold, spicy, addictive.
