🍽️ What is it?
Raw shrimp (butterflied open) cured on the spot in lime juice with a green sauce of serrano chili, cilantro and cucumber. Served ice-cold with red onion rings and tostadas. The "black" version uses chiltepín or morita chili.
✨ Why it's amazing
The shrimp stays nearly raw (only slightly cured), letting its natural sweetness shine while the chili wakes you up. Cold, spicy, addictive.

- Tianguis del Ceviche y Aguachile (Romantic Zone) — Francisca Rodríguez 111. Exactly what the name says. Tuesdays only, 12-6 PM.
- Juan Tiburón (Versalles) — Viena 131. Their "aguachile with raicilla" is worth the visit.
